we had the best Greek dinner ever and I made it!
to celebrate my first (week)day off of school I decided to get a recipe from the yummy blog Closet Cooking. The other time I used this blog the food turned out so good that ever since I have been dreaming about its mouth watering photos…. I totally recommend it!
Next time I will try this Caramelized Apple Grilled Cheese Sandwich. In my opinion, sweety and salty is the best mix you can have. Oh how I miss banana pizza with lots of cheese, cinnamon and sugar. Perfect!
Chicken Souvlaki
(makes 4 servings)
Ingredients:
1 pound chicken breast (cut into strips)
2 cloves garlic (chopped)
1 lemon (juice and zest)
1 tablespoon yogurt
1/4 cup olive oil
1 teaspoon oregano
1/4 teaspoon salt
1/4 teaspoon pepper

Directions:
1. Combine all ingredients and let meat marinate for 30 minutes to overnight.
2. Skewer the meat.
3. Cook on the grill or under a broiler for about 4-5 minutes per side.

Spanakorizo (Greek Spinach Rice)
(makes 4 servings)
Ingredients:
1 tablespoon olive oil
1 small onion (chopped)
2 cloves garlic (chopped)
1 bunch spinach (roughly chopped)
1 cup long grained rice
2 1/2 cups chicken broth (or water)
1/4 cup parsley (chopped)
1/4 cup dill (chopped)
salt and pepper to taste
1 lemon (juice and zest)
1/4 cup feta (crumbled, optional)
1 tablespoon olive oil
1 small onion (chopped)
2 cloves garlic (chopped)
1 bunch spinach (roughly chopped)
1 cup long grained rice
2 1/2 cups chicken broth (or water)
1/4 cup parsley (chopped)
1/4 cup dill (chopped)
salt and pepper to taste
1 lemon (juice and zest)
1/4 cup feta (crumbled, optional)

6. Reduce the heat, cover and simmer until the rice is cooked, about 20 minutes.
