Chicken Parmigiana


I made this dish for the first time in my life and I can easily say that was the most complex food I ever cooked! Not saying this recipe was super hard or anything.. the truth is that was pretty easy with the help of our new cookbooks 😛  Here is how I prepared it: 

Basic Sauteed Chicken Cutlets 

2 chicken breasts
1 cup of flour
1 cup of bread crumbs
1 teaspoon of salt and dried oregano
2 tablespoons olive oil
1 egg 

Heat the pan for 2 or 3 minutes and prepare the chicken. First place the flour in a plate, the egg (beaten) in a bowl and the bread crumbs mixed with oregano e salt in another. Dredge each piece of chicken  first in the flour, then in the egg, and finally in the bread crumbs, pressing them to help to adhere.
Add the oil and when it is hot (a pinch of flour will sizzle) add the chicken piece to the pan (one at the time). Cook each side for 3 to 4 minutes. 

Parmigiana set up 

1 cup and half of tomato sauce
1 cup of mozzarella 

Pre-heat the oven to 400F.
Spread about half cup of basic tomato sauce on the bottom of the baking dish. Place the chicken cutlets on the top of the sauce, and top with another cup of sauce. Sprinkle 1 cup of mozzarella  over the sauce. Bake until the cheese melts and the sauce is hot, 10 to 15 minutes. Top with oregano and serve 😛
