Chicken Fajitas

 I have to post the recipe David used to make these fajitas. The vegetables were crunchier than usually and there was spicy and sweet flavour to them. We ate them so fast, it was ridiculous. 😛

Authentic Fajita Seasoning Recipe

Ingredients:
1/2 cup Water
1/4 cup Lemon Juice
2 clove Garlic, crushed
1 tbsp. Worcestershire Sauce
1/2 tsp. Oregano
1/2 tsp. ground Cumin
2 tsp. Brown Sugar
dash of Tabasco

Directions:
Place all ingredients in a glass bowl and blend well. Marinate in the refrigerator, for at least one hour before cooking.

 

Chicken Chipotle and Veggie Goat Cheese Pizzas

these pizzas were really good but we can’t be proud about Panago’s pizzas. 😛 This time we ordered (I know it sounding like a Panago ad) chicken chipotle and the veggie pizza we loved last time. I don’t know why but their quality standards are very poor. This time the veggie pizza was mediocre I don’t even remember why I liked it before. The chicken one was good, even though was not a Brazilian Chicken Catupiry 😛 The best chicken pizza in the world, hard to understand why David said it was like having chicken and mayonesse on top of a pizza! Crazy talk!

 

Roasted Beef and Scalloped Potatoes

tonight we had left overs dinner…much better than yesterday 😛

I tried scalloped potatoes for the first time in my in-laws last month. Then when I saw a box promissing yummy and fast scalloped potatoes at the grocery store I couldn’t resist it. David was kind of against it but we bought. I didn’t like it so much yesterday, the consistence was not the same I remembered.  I think I liked it today because we baked it again. 😛 Next time we will try to make the real deal…

 

Scalloped Potatoes, Green Pepper Chicken and Corn

this was the day the Olympic torch passed through Kamloops, actually it changed of hands in front of our building. I tried to take pictures from the balcony but they are not amazing (to not say they suck). My food got cold and I got no pictures! Great!

 

Pork Tenderloin, Cassava and Corn

this is the perfect dinner for a long day in my opinion. The cassava is bought frozen and peeled from Superstore, ready to be boiled. You cook it for 40 minutes at the same time you throw at the oven the pork tenderloin, which we bought spiced at the same place 😛 easy and super yummy
